    Dry Fruit Cake Recipe

    Dry fruit cake is a soft and moist cake packed with lots of dry fruits and nuts. It has the same warm and feel of a Christmas style cake, but without being too heavy. Soft and buttery cake made using dried fruits, flour, eggs, oil, milk powder. You will love my whole wheat fruit and nuts cake. And this snack sized cake is perfect for teatime, gifting or a quick holiday dessert.

    About Dry fruit cake

    Dry fruit cake is a soft and delicious buttery cake that is so simple and easy to bake. It is made using basic ingredients like flour, eggs, milk powder, oil, sugar and a handful of mixed dry fruits and nuts. These are mixed together into a smooth batter, and baked to create a soft, tender cake that feels so rich without doing much effort. The fruits and nuts add natural sweetness, flavour and a bit of chewiness in every bite. 

    Dry fruit cake is one of the beginner friendly and fail proof recipes, that it bakes beautifully every single time. You can also make it healthier by swapping to whole wheat flour and it still turns delicious and wholesome. And the recipe is so versatile that you can mix in any dry fruits and nuts you like or adjust the sweetness to suit your taste. 

    This type of fruit cakes are baked during christmas season. Since dried fruits and nuts are available abundant during this time. The cake is perfect to gift during this time of the year. Individually wrapped dried fruits cake makes a great gift ideas for christmas.

    FAQ 

    Q. Can I make this cake eggless ? 

    Yes, you can just skip the eggs and add yogurt or flax eggs for a soft and moist cake. 

    Q. Can I bake this using a pressure cooker ? 

    Yes, this cake can be baked using a pressure cooker. Don't add a whistle or gasket while baking the cake. 

    Q. Why did my cake turn dense ?

    This usually happens if the batter is overmixed or if too much flour is added. Measure and add the flour. And gently mix the batter until everything is combined. 

    Q. Do I need to soak the dry fruits before adding them to the batter ? 

    Soaking is completely optional in this recipe. If you want a soft and juicy texture, then soak the dry fruits in warm water for a few minutes or in rum at least a day before making. 

    Q. Can I add other flavouring agents ? 

    Yes, you can add a pinch of nutmeg, cardamom or cinnamon powder to enhance the flavour of the cake. 

    Ingredients

    Plain Flour - all purpose flour is used in making this cake. It makes the cake soft and tender. You could use entirely wheat flour or a mixture of half plain flour and half whole wheat flour. I am sure the cake texture will be good either way.

    Milk powder - I recommend using milk powder in the cake. Milk powder adds the proper texture to the cake and make it tasty.

    Dried fruits and nuts - You can use a mixture of any nuts or dried fruits as you prefer. I recommend using raisins, dates, tutti fruity and cashews for best taste.

    Eggs- eggs are used in this cake. You can skip eggs and use extra ¼ cup of yogurt instead of eggs. 

    Oil - I used refined oil in my cakes. You could use any flavourless oil like vegetable oil or canola oil. Melted butter can be used in this cake as well.

    Dairy - Milk and curd can be used to create proper perfect texture in the cake.

    Expert Tips

    1. I used tutti fruity, raisins, dates, kishmish, almonds, cashews. You can use any mixture of dried fruits. Add a generous amount of dry fruit and nuts for a delicious chewy and crunchy bite. 
    2. If you are using a round cake pan or smaller size cake pan. The baking time will vary.
    3. Instead of oil you can use melted butter.
    4. Never over mix the cake. Always fold gently when combining wet and dry ingredients so the cake stays light and moist.
    5. over mixing the cake batter can activate the gluten in the cake and makes it dense.
    6. A shot of rum or any alcohol can be added along with the dried fruits to make it more festive.

    Storage & Serving

    These dry fruit cake slices can be stored at room temperature for 3 to 5 days in a container. It can also be refrigerated for 7 to 10 days. 

    Delicious dry fruit cake can be devoured on its own or you can serve this bite sized cake along with a warm cup of tea during the evening.  If you're serving for parties, serve with whipped cream, chocolate sauce or a scoop of ice cream. 

    Step by Step Pictures

    1)take all your ingredients. 

    2)First lets mix the dry ingredients. Take plain flour in a bowl.

    3)Add in milk powder. Milk powder is used for the texture of cake.

    4) Add in baking powder.


    5)Add baking soda

    6)Add dried fruits and nuts.

    7)Mix well. this is your dried ingredients.

    8)Now let's mix the wet ingredients. Take eggs in a bowl.

    9)Add sugar

    10)Add vanilla extract

    11)Whisk to combine

    12)Add in oil, yogurt and milk.

    13)Mix well.

    14)Add the dried ingredients

    15)Fold gently

    16)Spoon this into the prepared pan. You have to line the pan with parchment paper.

    17) Bake till done.

    18)Cool completely. Slice and serve

    Ingredients
      

    Dry Ingredients

    • 1¾ cup All Purpose Flour | Maida (210 grams)
    • 1 cup Sugar (200 grams)
    • ¾ cup Milk Powder (60 grams)
    • 1 cup Mixed Dried Fruits & Nuts (200 grams)
    • 1 teaspoon Baking Soda | Cooking Soda
    • 2 teaspoon Baking Powder

    Wet Ingredients

    • ½ cup Milk (120 ml)
    • ¼ cup Curd | Yogurt (60 ml)
    • ½ cup Vegetable Oil (120 ml)
    • 2 large Eggs
    • 2 teaspoon Vanilla Extract

    Instructions
     

    • Preheat oven to 180 degree C. Line a 20 cm cake pan with parchment paper and set aside.
    • Take flour, baking soda, baking powder, milk powder in a bowl and mix well. Add dried fruits and nuts and mix well. Set aside.
    • Take another bowl, add in eggs, sugar, vanilla extract and mix well. Add in yogurt, milk, oil and mix well.
    • Now add in the dry ingredients and fold gently.
    • Spoon this into the prepared pan and bake for 40 to 50 mins. Remove and cool completely. De mould, slice and serve.
